Recipe: Tomato, Pesto & Ricotto Pasta


Hi Guys!

Today I have a really quick recipe for you that I like to make for an evening meal when I haven’t got much time! It is very filling, tastes delicious and is so quick to make!

I took this recipe from BBC Good Food (click here to go to the original one), but I tweaked it a little to suit!



You will need:

Three cloves of garlic

One tablespoon of chilli flakes

Kale (as much as you like)

2 Tins of chopped tomatoes

500g Penne Pasta (or whichever pasta you prefer)

Ricotto (as much as you like)

Pesto (as much as you like)

Parmesan (as much as you like)


1. Heat the oil in a large saucepan and add the chopped garlic. Let them cook for two minutes and then add the chilli flakes and the tinned tomatoes.


Add a pinch of salt and let the tomatoes, garlic and chilli flakes simmer until it thickens.


Wash the kale, chop it and add it to the sauce.


Whilst the sauce is simmering, put the pasta onto boil.


Once the pasta is cooked, add it to the sauce, mix it in and then portion it into a bowl to serve.


Add a tablespoon of ricotta, pesto and finish with shavings of Parmesan…& you’re done!

& it is that easy!
